We spend a good amount of time tweaking and making changes when we start a new menu here at WaterScapes like we have done this past week. Sometimes the first idea you have may not be the right idea once execution time comes around. Making changes needs to be carefully thought out. Does it make sense to change the dish or presentation? Does it cost more or save to make the change? Will the quality or integrity of the dish change increase or decrease?
What does this all mean? Well, we did a blind taste test this week on Pork Rib Chops.
As you can see below, we have three different chops. One is Commodity; another is Salmon Creek Farms, which is all natural pork and Kurobuta, which comes from purebred Berkshire pigs. Can you tell the difference by looking at them?? To find out which we one we chose, you will have to come in and see for yourself.

In my opinion the best fish Market is Independent Seafood in Georgetown for local fish, crab, oysters and definately the best place for fresh local shrimp. Cotton is the owner and is well respected in the community.
