After our dinner at Avec in Chicago, we joined the guys from Sushi Samba (NY) at the Chicago location. They treated us to some sake and the little river crabs you see pictured below, called Sawagani. These crabs were swimming at the sushi bar, took a short trip to the fryer and then onto the plate, where they didn’t linger long. Squeeze the grilled lemon and pop them in your mouth. The taste is great, but it’s hard to describe – crisp and light like a potato chip (if it were made out of crab). Tasty and a conversation starter!
