I picked up these guys fresh from my supplier (Wayne), for Memorial Weekend and they were so good and tender. Definitely, the king of all snappers is the Hog snapper. It has this beautiful firm fatty flesh with a sweet sea flavor. It is amazing when slowly roasted in a sauté pan with just a touch of butter and Fleur de Sel (sea salt).
At WaterScapes, we roasted the Hog Snapper and paired it with a Smoked Oyster Orzo, Herbs and Yellow Tomato Romesco. It sold out in one night, definitely a hit! Hog Snapper is hard for consumers to find to prepare at home, but if you do, here’s a tip: treat the fish delicately as possible and pair it with a bold favor, it will stand up well together.
