After traveling around and working in some great restaurants and hotels it is a dream come true to be back in South Carolina, and to be working at The Marina Inn at Grande Dunes. As Executive Chef of WaterScapes, the experiences I have had in the different places I have lived and traveled influence and inspire my efforts to bring our guests fresh and creative cooking.
Growing up in South Carolina and spending my childhood in the woods and on the water, I have a real respect for the natural resources the Lowcountry offers. We are creating a reputation here at WaterScapes for using only the best Seafood, Meats & Produce and sourcing as much local items that we can find.
People ask me all the time what is my favorite thing to cook and it’s an easy answer: “Fish.” With Murrells Inlet right down the road from us, I’m lucky to have the opportunity to bring our guests at WaterScapes fish like these Strawberry Grouper that just came off the boat today. Sometimes when these little fish come off the sea bottom at 80 to 100 feet, the pressure will make their eyes pop. So a good tip for judging freshness is to check their gills.
